Have a look at what I wrote about the 46% Classic...then turn the volume up to very load! Breathtaking. David Baker's signature creamy maltiness is these, basically it envelopes the entire mouth, but the high intensity spirit just drives this whisky right down the palate. Surprisingly notes of chocolate, bitter orange and rosewater make an appearance. And once again, the maltiness just lasts and lasts. (pic is a representation only)

This is very impressive, very impressive. Those that know me, know that I'm not a great fan of small cask matured whiskies. BUT tasting David's entry level Classic malt, just confirms in my mind that David is on the right track. His distilling skills, oak management and maturation abilities and importantly the style of his malts is spot on, and just gets better with every new release. This malt is classically malty (as all whiskies should be), crisply intensive and the malt flavours just hang around for what seems an eternity. Look out for the magic oak spice on the nose. David Baker's combo malt, where he matures his spirit in 2nd fill bourbon barrels and used French oak casks...and what a dram he gets at the end. Smelling more grainy than the Classic, more fresh grain than malted, there's also a load of vanilla, coconut, dried fruits and kitchen spice flavours coming off as well. The French oak spice marries perfectly with creamy cereal flavours on the palate. And once again this malt just fill every crevice of your palate. And once again, the flavour just hangs around for ages. (pic is a representation only)

It amazes me that the increase in alcohol is not just "an increase in alcohol" attack on the palate. Cask strengths just have a habit of reavealing more complex flavours and textures than their softer cousins. And this cracker from David Baker is no exception. The peat is intensified, there's an earthiness and cherry/berry flavours not seen in the 46% and on the palate it is just explosive. And it's all in balance as there is plenty of creamy oak and malt to balance up the high strength alcohol. Great stuff David Baker.

I never thought I would say this about an Aussie malt...but this is a masterpiece. Soft, pulpy, subtle fruitiness, sweet vanilla oak and then you notice the peat sitting underneath. A distant bonfire, dry and tangy that works really well with this malts quite sweet & rich palate. Very long palate with (once again) a smoky tanginess that hangs around for ages. brilliant stuff and a credit to David's distilling skills. (pic is a representation only)

Meet Peter Bignall, Australia's first distiller of a pure 100% rye based spirit that's double distilled but has yet to see any oak. The purity of the product is amazing, it is just so very clean for a spirit distilled in May this year!! And the taste? Pure, fresh, chewy rye loaf with a spicy alcoholic lift. Perfect on the rocks or even better as part of mix.

Is this the best Tassie whisky yet? From that enterprising fellow, Mr Tim Duckett, this is the first ever independent bottling of an Australian whisky. And what a beauty it is. it is so rich and luscious, no pickled onion smells and perfect integration of oak, spirit and malt. The palate is long and sumptuous and loaded up with vanilla, clotted cream, crème brulee, custard and best of all Darryl Lea milk toffee flavours. The spirit is need as it add zest and life to this very rich palate. And if you want a third part opinion then go and have a look at Andrew Derbidge's tasting notes on Australian Gourmet Pages. His summary goes as follows, " Wow! An extremely pleasant whisky and one that is very more-ish. Despite the high alcohol, it's wonderfully approachable and not at all aggressive. (A gentle giant?) Sorry, but if this was served to me blind, there's no way I'd pick it as an Australian whisky. If you'd told me this came from the heart of Scotland, I wouldn't doubt it for a second - it's very Scotch-like. (I often wonder how Australian whisky producers feel about such comparisons. Is this a compliment or an insult?) In either case, this is great whisky: Well made, well matured, and well delivered."

Matured in 100lt ex port quarter casks that have been shaved and lightly re-charred, this style of Lark is a gentle alternative to the big blockbuster cask strengths. From the Larks, "Our port barrel whiskies usually have a great maple syrup pancake with vanilla ice-cream nose, and the palate rich Christmas pudding with nuts and raisins, often with dark chocolate and glace orange and ginger, and sweet spices such as fenugreek and cinnamon. Just tried this...one of Bill's best yet!!! That's what I wrote last week until I tasted LD57. So LD93 gets shunted down the line, but only a little as this new offering from the Lark's in Tasmania is amazingly textured, very honeyed, full flavoured and as with many of Lark's high strength malts, just so full of life and vigour.

 
Smiths Angaston 2000 11yo Touriga Tawny Cask Finished

Now let's get this story straight. Yalumba in their words only put three charges through their old pot still between 1998 and 200. The still was decommissioned in 2011. The still was originally commissioned in 1931. From this 2000 run, only 11 hogsheads were filled, mainly a mixture of French and American oak, some which held some old Yalumba sherry. So this is the third release at cask strength, mainly from matured in French oak with 14 months additional maturation in 90lt ovtaves that once held a Touriga tawny dessert wine (what we used to call port). I haven't had a chance to try it, but in their words, "Aroma: Full and bold with vanilla, dried figs, spices and caramel. Palate: Full and luscious with caramel, toffee and nutty flavours, and finishing rich and creamy with sweet malt, dried fruits and spicy oak aftertaste." Pic indicative only

 
Southern Coast Single Malt Whisky Batch 002

This brand new Aussie whisky from Adelaide, certainly made an impact when it was judged at the 2010 MWSoA whisky competition. Under the direction of the affable and knowledgeable Mr Ian Schmidt, this young whisky certainly belies it's age. First filled into cask #11 in September 2006 it was bottled in time to enter the MWSOA Malt Whisky Awards in 2010 where it was awarded a silver medal (83pts) and the Pourers’ Prize. Unfortunately due to the spillage when it lost a hoop there were only ever 97 bottles filled. I'll leave to Ian to explain, "Nose: mint, pine needles, dried rosemary, floor polish, clean lifted alcohols with toffee/praline/chocolate underneath, clean leaf litter, butter roasted nuts. The longer it sits, the flatter and more earthy and nutty it gets, but remains solid: nutty with lots of chocolate, dried fruit and varnish. Palate: sherry & chocolate, rich and slightly oily, mint toffee and more varnish, sour plums, some hints of woodsmoke, bitter herbs. Finish: mint and drying wood, some bitterness – alcohol, wood and mint toffee with nuts, a bitter chocolate reprise; some leather. Balance: There’s a nice continuity through the nose and palate and early into the finish, but the very end of the finish lets it down." Pic indicative only.

 
Southern Coast Single Malt Whisky Batch 003

The second release of Ian Schmidt's Southern Coast Distiller's single, and what a gem it is. Filled into a re-made and re-furbished sherry cask made from American oak in October 2008 this cask was bottled in April 2011 just in time for the 2011 MWSoA Malt Whisky Awards where it won a silver medal and the prize for best Australian Malt. 173 bottles were filled at 46%. In Ian's words, "Nose: Paper, slightly flat, honey, toffee, walnuts, chocolate covered dates, fruit syrup, varnish, milk chocolate Palate: Fruit & nuts, syrupy, warming, late minty oak Finish: Praline and metallic bitters, warm spirit, thinning fruit and growing mint, some peanut skins. Comment: Nose is more promising after 10 minutes, opens up in the glass. Palate and finish dry out as the bitters and mint, quietly overwhelm the fruit. A quiet achiever. " pic indicative only.

 
Southern Coast Single Malt Whisky Batch 004

Wow! Batch 004 already...and what a beauty it is...again. Expressive nose of melon, toffee, honey, a degree of fresh oakiness, a touch of nail varnish and creamy malt. Once it's on the palate, initially there is distinct zestiness and oak spice and then comes the massive, big mouthfeel, loads of raisined fruit and soft luscious maltiness. Such great integration for a 4yo The key to this and all of Southern Coast's malts is the superb cask handling, both from the cooper SA Cooperage and from the way the barrels are handled and matured by Ian, Vic and Tony at the distillery. Careful ferments, tight, miserly cuts and a strong sense of when the right time to bottle has bought these malts has in a very short period of time, bought this distillery to the very forefront of exciting and high quality Australian distilling. Maturation takes place both ion the warm climate Adelaide Plains and the cooler Adelaide Hills. Bravo lads.
